Peach Cobbler Parfait

- 4 refrigerated country-style biscuits
- 6-8 peaches
- 1 C. sugar
- 2 C. vanilla pudding
- 1 C. peach jam
- 1/2 C. gingersnap cookies, crumbled
- 1 can whipped cream
- 4 parfait glasses
Bake biscuits according to package directions. Cool and crumble the biscuits. Peel and slice peaches. Toss with sugar and let stand to allow syrup to form.
To assemble dessert, put a dollop of pudding in the bottom of each parfait glass, then top with some peach jam and crumbled biscuit pieces. Next, spoon some peaches and their syrup over biscuits. Add a layer of whipped cream and some crumbled gingersnaps. Repeat this layering process until your glass is full, ending with whipped cream. If you desire, decorate top with sliced fruit.
