Peach Sherbet

This is a yummy sherbet. Perfect in the summer.

  • 4 med. fresh peaches, peeled
  • l/2 C. buttermilk
  • l/4 C. lemon juice
  • grated lemon rind
  • 1 sm. pinch salt

Remove pits and mash peeled peaches with fork until light and fluffy. At the same time, work in lemon juice and grated rind. Add buttermilk and salt, then pour into ice-cube tray and set in freezer. When mixture is frozen almost solid, whip until very light. Return to ice-cube tray and freeze until set. Unmold and serve immediately.
