  • 1/2 C. butter
  • 1/2 C. granulated sugar
  • 2 eggs
  • 1 1/4 C. flour
  • 1 tsp. baking powder
  • 6 ripe peaches
  • 5 oz. cube sugar
  • 1 1/2 C. cream
  • 1 1/2 C. icing sugar

Cream the butter. Add the granulated sugar and beat until the mixture is thick and pale. Beat the whole eggs and mix them gradually into the butter-sugar mixture. Gradually blend in the flour and baking powder. Pour the batter into a buttered round cake pan. Bake at 350 degrees until the center is cooked, checking for doneness with the tip of a knife. Meanwhile peel, pit and quarter the peaches and poach them in a syrup made with the cube sugar and a glass of water. Drain the fruit and let cool. Remove the cake from the pan; cool on a rack. Cut the cake into three layers horizontally with a long knife or thread. Whip the cream with the icing sugar. Assemble the cake, filling the layers with peaches and whipped cream. Decorate with the remaining cream and refrigerate.
