  • 2 C. all purpose flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 C. cold unsalted butter, cut into cubes
  • 1/4 C. cold cream cheese, cut into cubes
  • 2 T. buttermilk
  • 1/4 C. peanut butter
  • 1/4 C. blackberry jam (or any jam/jelly flavor of your choice)
  • 1 egg, lightly beaten
  • 1 T. heavy cream

Preheat your oven to 400°F. In a large bowl, sift together flour, baking powder, and salt. With a pastry knife or your fingers, cut in butter and cream cheese until crumbly. Pour in buttermilk and gently mix until dough is created. Form dough into a disc, wrap in plastic and refrigerate. Once the dough has chilled, roll out onto floured surface until 1/8 in. thick. Cut 24 fluted circles from the dough and fill 12 with peanut butter and jelly. In a small bowl, whisk together egg and cream. Brush the edges of each with egg wash and place the non-filled crust over each filled crust. Gently press together on a wooden stick and brush tops with remaining egg wash. Cut 3 small slits in the top of each and place onto a parchment lined baking sheet. Bake for 12 minutes, or until golden brown. Cool on a rack and serve.
