Peanut Butter Chocolate Cream Cheese Truffles

- 4 ounces cream cheese, softened
- 1½ chocolate chips, milk chocolate
- ¼ cup peanut butter
- ½ finely chopped peanuts
In a small microwave ball, melt the chocolate chips for 30 second intervals, until smooth. In a separate bowl, using an electric mixer, beat the peanut butter and cream cheese until creamy. Add the melted chocolate and beat to combine. Cover the bowl with plastic wrap and place in the fridge for 2 hours. Use a teaspoon to scoop the mix into small bowls and roll with hands into spheres. Roll the balls in the peanuts and keep refrigerated until ready to serve.
