  • 2 cups peanut butter chips
  • 2 cups chocolate chips (optional)
  • 2 cups sugar
  • 1 ¼ cups softened butter
  • 2 cups flour
  • ¾ cup cocoa
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 eggs
  • 1 pint of vanilla or peanut butter ice cream

First heat your oven to 350 degrees F. In a large mixing bowl cream the softened butter and sugar until it is fluffy and light. Next, add both eggs and the vanilla and beat well. Combine the baking soda, cocoa, and flour in a separate bowl. Gradually blend the two mixtures together. Then stir in the peanut butter chips (and chocolate chips if you want extra-chocolatey cookies). Place spoonfuls of dough onto your cookie sheet and bake for 8-10 minutes. Let the cookies cool and the ice cream thaw. Finally, place one scoop of ice cream between two cookies and gently press the cookies together. Enjoy!
