  • 2 ½ C. flour
  • ½ tsp. baking powder
  • Dash salt
  • 2 C. sugar
  • ¾ C. unsweetened dark cocoa powder
  • 2 ½ sticks butter, softened and divided
  • 4 eggs
  • 2 tsp. vanilla extract, divided
  • 1 C. powdered sugar
  • 1 C. peanut butter
  • 1 tsp. cinnamon
  • 1 T. milk

Preheat oven to 350 degrees. In a small bowl, combine flour, baking powder, and salt; set aside. Melt 2 sticks of butter and stir in cocoa powder and sugar. Whisk in eggs, one at a time, stir in 1 teaspoon of vanilla, and gradually add in flour mixture. On a baking sheet lined with parchment paper, spoon dollops of batter about 2 inches apart. Bake for 10 minutes until cookies are set up. In a bowl, use an electric mixer, beat together powdered sugar, ½ stick of butter, peanut butter, cinnamon, 1 teaspoon of vanilla, and milk. Once smooth and well combined, assemble cookies by spreading a generous layer of peanut butter cream in between two brownie cookies.
