  • 4 oz. cream cheese, softened
  • ½ C. peanut butter
  • ¼ C. sugar
  • ¾ C. whipped cream
  • 1 ½ tsp. vanilla extract, divided
  • 2/3 C. semisweet chocolate chips
  • 1/3 C. heavy whipping cream
  • Graham cracker crust or cookie tart crust, baked and cooled

In a large bowl, use and electric mixer to cream together cream cheese, peanut butter, and sugar until well combined. Mix in 1 teaspoon of vanilla and ¼ cup of whipped cream. Using a rubber spatula, fold in remaining whipped cream. Smooth mousse over tart crust and refrigerate to set up. Prepare ganache by breaking up chocolate chips in a food processor. In a small saucepan, heat cream until just bubbling. While processing, pour cream over chocolate and mix until smooth. Stir in remaining vanilla and let cool slightly. Pour over peanut butter mouse and refrigerate tart for at least 2 hours before serving.
