Pear and Brie Quesadilla
- 4 flour tortillas, 10" in diameter
- 2 medium Bartlett pears, perfectly ripe
- 4 oz. Brie
- 1/4 C. or more fresh salsa (either red or green is fine)
Place tortillas on a flat working surface. Core and slice the pears into thin (about 1/4 inch) pieces. Slice Brie into 12 or more thins slices. Place pear slices and cheese on each tortilla, leaving one side empty for folding over. Fold each tortilla into a semicircle, with the pear and cheese on the inside.
Heat a large non-stick skillet. Place a folded tortilla in the pan and heat until the cheese starts to melt. Gently turn the tortilla over and continue heating until it is lightly browned. Remove to platter. Repeat for remaining tortillas. Slice each quesadilla in half and drizzle about one Tbs. of salsa over the top.
