Peas and Artichokes

These green veggies look really nice together! You can also use frozen or canned artichokes if you can't get any fresh ones.

  • 8 med. artichokes
  • 1/2 C. olive oil
  • 1 med. onion, finely chopped
  • 1/2 C. tomato sauce
  • 1 tsp. tomato paste
  • 1/2 C. fresh dill, chopped
  • salt
  • pepper
  • 1 16-oz. bag frozen peas, defrosted
  • 1 C. boiling water

Prepare artichokes. Parboil for 5 minutes, drain and set aside. In a 3-qt. saucepan, cook onion in hot oil over medium heat until tender. Stir in tomato sauce, tomato paste diluted in 1/4 C. water, dill, salt and pepper. Cook for 2 minutes.

Add peas and stir with fork to separate. When peas are well-coated with tomato sauce, add boiling water and prepared artichokes. Cover and simmer over low heat for 20 minutes or ntil done and water is absorbed.
