This crockpot salad features pecans, artichokes, Brussels sprouts, and cranberries. This veggie dish will be a healthy side.

  • 1/4 lb. Brussels sprouts, trimmed and cut in half
  • 2 C. artichokes, cut in half
  • 1/4 C. pecans, whole
  • 1/8 C dried cranberries
  • 2 C. spinach leaves
  • 1/2 tsp cinnamon
  • 3 tbsp water
  • 1/4 C. cream cheese, cut into small pieces
  • sea salt and freshly ground black pepper
  • freshly grated nutmeg

Cook the sprouts in rapidly boiling, salted water until tender. Combine all the ingredients into the crockpot.  Stir everything together well and cook on high for 1-2 hours.
