Pecan Fudge Pie

Using a pre-made pie shell cuts baking time in half, but doesn't sacrifice the taste.

  • 1 9" unbaked pie shell
  • 1/2 C. butter
  • 3 squares unsweetened chocolate
  • 4 eggs
  • 3 Tbs. white corn syrup
  • 1 1/2 C. sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1 C. chopped pecans

Melt butter and chocolate in the top of a double boiler. Let cool. Beat eggs until light; beat syrup, sugar, salt and vanilla into eggs. Add the nuts and then the cooled chocolate. Mix thoroughly and pour into pie shell. Bake at 350 for 25-35 minutes, until top is crusty and filling is soft but set. Serve plain or with ice cream or whipped cream.
