Pecan Pie Muffins

My husband can not get enough of these. Pecan Pie Muffins can be baked in fancy little muffin cups and used for holiday parties. All I can say is they do not last long at our house!

Ingredients

  • 1 C. packed brown sugar
  • 1/2 C. flour
  • 1 C. chopped pecans
  • 2/3 C. melted butter
  • 2 eggs, well beaten
  • 1 tsp. vanilla

Directions

Combine brown sugar, flour and pecans in one bowl. Combine butter, eggs, and vanilla and mix well. Stir into the flour mixture. Fill greased

mini-muffin tins 2/3 full. Bake in 350-degree oven for about 14 minutes until set.
