Pecan Pie Muffins
Ingredients
- 1 C. packed brown sugar
- 1/2 C. all purpose flour
- 1 C. chopped pecans
- 2/3 C. butter, softened
- 2 eggs, beaten
Directions
Stir together brown sugar, flour, and nuts. In a separate bowl, beat butter and eggs until smooth. Stir in dry ingredients just until combined. Spoon into greased and floured mini muffin pan. Bake at 350 degrees for 20-25 minutes. Cool on wire rack.
