Pecan Praline Twice Baked Yams
Ingredients
- 5 7/8 lb. yams, skin removed
- 2 1/8 lb. russet potatoes, use skins only
- 16 oz. brown sugar
- 2 oz. Bbtter
- salt, to taste
- Praline Sauce:
- 1/4 lb. butter
- 16 oz. brown sugar
- 1/4 lb. pecan pieces
- 16 oz. half and half
Directions
Bake potatoes and yams in oven until done. Top or half russet potatoes and scrape out potatoes. Take yams skin off. Mash the yams with brown sugar and butter. Add the salt and cinnamon to taste. Fill pastry bag and pipe into the russet potato shells. Twice bake for 10-12 minutes. Let cool before adding praline sauce.
Praline Sauce Recipe: Place butter, brown sugar, half and half and pecan pieces into a sauce pan. Cook until thick. When yams are cool, pour praline sauce over the top of the yams.
