  • 1 C. flour
  • 1/2 C. oats
  • 1/2 C. brown sugar, packed
  • 1/2 C. butter, softened
  • 3/4 C. sugar
  • 1 (15 oz.) can pumpkin
  • 1 (12 oz.) can evaporated milk
  • 2 large eggs
  • 2 1/4 tsp. pumpkin pie spice
  • 3/4 C. pecans, chopped
  • 1/4 C. brown sugar, packed
  • whipped cream

Preheat the oven to 350 degrees. In a bowl, combine the flour, oats,brown sugar, and butter. Beat on low for 1 to 2 minutes, or until crumbles form. Press this mixture into the bottom of an ungreased 13x9 baking pan. Bake for 15 minutes.

In another bowl, mix the sugar, pumpkin, evaporated milk, eggs, and pumpkin pie spice. Beat at a medium speed until smooth, about 1 to 2 minutes. Mix in 1/4 C. pecans. Pour this mixture into the baked crust. Bake for 20 minutes.

In a small bowl, combine the brown sugar and the rest of the pecans in a bowl. Sprinkle the pecan topping over the filling and bake for another 15 to 25 minutes, or until a knife inserted in the center comes out clean. Cool completely then cut into bars.
