Pecan Rice

Pecans sautéed with onion, parsley, basil and ginger make plain brown rice come to life with rich, nutty flavor.

Ingredients

  • 1 C. brown rice
  • 2 Tbs. margarine
  • 1/4 C. finely chopped onion
  • 1/2 C. finely chopped pecans
  • 2 Tbs. minced parsley
  • 1/4 tsp. dried basil
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. salt

Directions

In a saucepan bring 2 C. water to a boil. Add rice and stir. Reduce heat to low, cover and simmer for 40 minutes. When rice is done, melt margarine in a small skillet over medium heat. Sauté onions, pecans, parsley, basil, ginger, pepper and salt. When onions are tender stir mixture into rice and mix well
