Pecan Shortbread

This nutty, buttery shortbread will fill your kitchen with wonderful smells while baking.

Ingredients

  • 1-1/2 - 2 C. flour, sifted
  • 1 C. butter or margarine, softened
  • 1 C. confectioners' sugar, divided
  • 1/2 tsp. almond extract
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 2/3 C. pecans finely chopped

Directions

Combine flour, butter and 3/4 C. of confectioners'sugar and blend with a mixer, adding extracts, salt and pecans. Continue mixing until a dough forms. Shape dough into 1" balls and place on an ungreased baking sheet. Bake at 325º F. for 20 minute or until lightly brown.
