Penne pasta served in a vodka red sauce is a great variation of regular spaghetti and marinara sauce and you will love the change. This recipe is vegetarian, but feel free to add sausage or meatballs.

  • 1 pound penne pasta
  • ¼ cup olive oil
  • 3 minced garlic cloves
  • 1 can crushed tomatoes
  • 2 tablespoons vodka
  • ½ cup whipping cream
  • ¼ cup chopped parsley
  • Salt and pepper

Boil a large pot of water and add the penne pasta. Cook for 10 minutes and then drain. Heat oil over medium heat and add the garlic. When the garlic browns, add the tomatoes and season with salt. Boil the mixture and then lower the heat and simmer for 15 minutes. Pour in the vodka and cream and return the mixture to a boil. Lower the heat and add the penne pasta. Toss for 1 minute before stirring in the parsley and serving.
