This meatloaf has a spicy taste and it's very easy to make. My husband loved it and said it's better than just regular meatloaf. What's so good about this kind of meatloaf is it has melted cheese inside the middle.

Preheat oven to 350 degrees. Mix all ingredients except Pepper Jack cheese slices and chili sauce. Cut the meat mixture in half. Place the half mixture on a greased deep jelly roll pan, put 6 cheese slices on top of the half meat mixture then put the other half meat mixture on top of the cheese slices. Top with chili sauce. Bake for 45-60 minutes. The cheese slices in between the meat mixture will melt.

  • Meatloaf is certainly a "comfort food" in our family. I will definitely keep this recipe in the "box"; however, I'm pretty sure that the 2 Tbs. seasoning salt is an error. Two tsp. perhaps????--or even less? Otherwise, awesome! We love leftover meatoaf sandwiches!
