  • 2 C. rotini pasta, cooked and drained
  • ½ red onion, chopped
  • 2 cloves garlic, minced
  • 2 C. chicken, cooked and cubed
  • ½ C. bacon or ham, cooked and chopped
  • 1 (12 oz.) can evaporated milk
  • ½ C. ranch dressing
  • 1 C. cheddar cheese, shredded
  • 2 C. pepper jack cheese, shredded
  • 2 T. parsley

In a large skillet, sauté onion and garlic until fragrant. Briefly toss with cooked chicken and bacon. Pour into a greased baking dish and combine with cooked rotini. In a medium saucepan, heat evaporated milk, ranch dressing, and pepper jack cheese until melted and creamy. Pour over pasta, chicken, and bacon in the baking dish, top with cheddar cheese, and bake at 350 degrees for 20 minutes. Remove from oven, sprinkle parsley on top, and serve.
