• 2 C. grated sharp cheddar cheese (8 oz.)
• 1/2 C. (1 stick) softened butter
• 1 C. flour
• 1/2 tsp. paprika
• 1 tsp. salt
• Pepper jelly

Combine all the ingredients well. Wrap in plastic wrap, and chill for 30 minutes. Use a rounded tsp. of the dough, and form into a mini-muffin pan, or place on a baking sheet and make a fairly deep thumbprint in each. Fill with you choice of Pepper Jelly and bake in a preheated 400 degrees oven for about 10 minutes. Let cool before serving.
