Peppercorn and Mustard Prime Rib Roast

- 5 Tbs. minced garlic
- 2 Tbs. sea salt
- 2 Tbs. cracked peppercorns (red, green, and black)
- 3/4 C. Dijon mustard
- 8 lb. rib roast
Rub the rib roast with mustard, peppercorns, garlic, and salt. Allow to sit in the refrigerator overnight wrapped in plastic wrap.
The next day, allow roast to come to room temperature before baking. Place fat-side up into a roasting pan and preheat the oven to 450 degrees. Place roast on the lowest rack. Roast for 45 minutes, then reduce the oven temperature to 350. For medium rare, cook about 90 minutes at 350. Modify cooking time to your personal doneness preference.
Allow to sit for 20-30 minutes prior to serving.
