If you are feeling adventurous in your try cooking these spicy peppercorn lamb chops. It'll be fall-off-the-bone delicious, you won't be able to stop yourself from eating the whole thing. In the rare case you do have leftovers however, these lamb chops can make great gyros.

  • 6 lamb chops
  • 2 T. olive oil
  • 2 garlic cloves
  • 1 T. peppercorns
  • 1 T. rosemary
  • 1 tsp. thyme
  • ½ tsp. salt

Pulse olive oil, minced garlic, peppercorns, rosemary, thyme, and salt in a food processor until a paste rub has formed. Rub the paste on both sides of the lamb chops and set the meat in the fridge for 1 hour to marinate.

Prepare a grill by bruising the grates with olive oil. Place the lamb on the grill at high heat. Cook the pork chops for three minutes on each side or until cooked to desired rareness.
