  • 1 T. olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 T. paprika
  • 1 tsp. cumin
  • 1 (15 oz.) can crushed tomatoes
  • 4-5 C. chicken stock
  • 1 (15 oz.) can kidney beans, drained and rinsed
  • 1 T. fresh black pepper

In a large skillet, heat oil and cook chicken with onion and garlic until chicken is no longer pink. Transfer to your crockpot and season with paprika, cumin, and pepper. Stir in crushed tomatoes, chicken stock, and kidney beans. Cook on high for 3-4 hours.
