Everyone loves a cake pop! Why not try making your cake pops with peppermint candies?

  • 1 pkg. chocolate cake mix
  • 1 C. water
  • 1/2 C. vegetable oil
  • 3 eggs
  • 2 C. peppermint, crushed
  • White Chocolate Frosting:
  • 2/3 C. heavy whipping cream
  • 6 oz. semisweet white chocolate, chopped

Preheat oven to 350 degrees F. Beat cake mix, water, oil and eggs in a large bowl on low speed for 30 seconds. Add peppermint to cake batter. Mix well. Pour in greased cake pan and bake for 20 to 25 minutes. Once cake is cool, place in large bowl and mash into crumbs. Roll crumbs in little balls. 

For white chocolate frosting, heat cream in saucepan over medium heat until hot. Remove from heat and stir in white chocolate. Dip lollipop stick in white chocolate and then place in center of cake pop. Dip cake pops in white chocolate and place on waxed paper until chocolate hardens. If you desire, sprinkle with crumbled peppermint.
