This is a delicious, light, and airy souffle that is wonderful for Christmas!

Ingredients

  • 5 eggs
  • 1 1/2 C. sugar
  • 3 oz. sweet chocolate melted in 1/3 C. water
  • 1 Tbs. creme de menthe
  • 2 C. whipping cream
  • 2 pkg. unflavored gelatin dissolved in 1/2 C. water

Directions

Prepare a 1 1/2-quart souffle dish.  Oil and sugar the top third of a paper collar and tie it around the souffle dish.  In an electric mixer, beat together the eggs yolks and sugar.  By hand, fold in the chocolate melted in water, then add creme de menthe.  Add gelatin dissolved in water and then the lightly whipped cream.  Add stiffly beaten egg whites.  Turn into souffle dish and chill for four hours.  Remove paper collar and decorate with crystallized mint leaves or grated chocolate.

  • I bet this is excellent, but too expensive for me to make. I can not afford to buy Creme de Menthe. Wish you would give us this only with just mint candies dissolved in water and then cooled or some such. I think I might try melting some mint candies in the water and cooling both and I only have 100% pure cocoa powder, but I see I could make the baking chocolate by using 3 level T of powder and 1 T of oil... but scared to try it.... souffles can be touchy.
