  • 4 oz. pepperoni, diced small
  • 4 medium eggs
  • ½ lb. turkey sausage
  • 1 bell pepper, sliced lengthwise
  • 1 medium red onion, julienned
  • ¾ C. marinara
  • 1 C. shredded mozzarella
  • Salt and pepper to taste
  • Olive oil for cooking

Drizzle olive oil in a medium skillet and heat it to medium-high. Toss in the sausage and cook until the meat is crumbly. Toss in the rest of the veggies and pepperoni. Add the salt and pepper to taste. Preheat your oven to 375 degrees. Pour marinara in the skillet and mix it with the other ingredients. Crack the four eggs on top and sprinkle mozzarella on top as well. Bake in the oven for 10 minutes until the eggs are cooked the way you prefer.
