Pepperoni Pizza Pinwheels

- 1 can puff pastry, thawed to room temperature
- ¾ cup marinara sauce
- 4 cups shredded mozzarella cheese
- ¾ lb sliced pepperoni (spicy or mild)
Preheat the oven to 400°F. Line a baking tray with parchment paper or spray with non-stick spray. After spreading some flour on the surface, roll out the pastry sheet. Spread half the marinara sauce, half the cheese and half the pepperoni. Roll, starting from the narrow ends and repeat with second pastry sheet. Press them down to seal and then slice the rolls into 1-inch pieces and place on the baking tray, leaving 1-1.5 inches between each pinwheel. Sprinkle each pinwheel with the remaining cheese. Place in the oven and cook for 18-22 minutes, or until golden brown.
