Pepperoni Pizza Puffs

- 3/4 cup whole wheat flour
- 3/4 tsp baking powder
- 3/4 cup soy milk
- 1 egg, lightly beaten
- 3/4 cup shredded mozzarella cheese or dairy-free cheese alternative
- 1 cup pepperoni
Preheat the oven to 375 degrees.
Grease or spray non stick in 24 muffin cups.
Chop the pepperoni up into small pieces.
Whisk together flour and baking powder.
Add in milk and eggs and continue whisking.
Mix in mozzarella and pepperoni and let stand for 10 minutes.
Stir the batter and pour into the muffin cups.
Bake for 20 to 25 minutes or until puffed up.
