Peppers and Orange Spinach Salad

Get a good serving of iron and vitamin C in this zesty and nutritious salad. So delicious you'll forget you're actually eating vegetables.

Ingredients

  • 2 medium green bell peppers, cored and seeded, julienned
  • 1 medium orange, zested, peeled and sectioned
  • 1 head Boston lettuce, washed and torn into pieces
  • 2 C. fresh baby spinach
  • 1/2 small red onion, cut into thin rings
  • 2 Tbs. olive oil
  • 2 Tbs. balsamic vinegar
  • 2 tsp. Mrs. Dash Table Blend
  • Zest from orange

Directions

Prepare peppers and zest orange before peeling and sectioning. Toss lettuce and spinach together, divide between 6 plates. Arrange pepper slices, orange sections and onion rings on top of the lettuce. Make dressing by combining olive oil, balsamic vinegar, Mrs. Dash Table Blend and orange zest. Prepare dressing just before serving. Drizzle salad with dressing and serve.
