Perch Potato Pancakes

Perch potato pancakes were always my dad's specialty when I was growing up. He loved bringing home fresh lake perch and making the whole family dinner using this recipe from his father.

5-6 servings

Ingredients

  • 1 lb. perch fillets
  • 3 eggs beaten
  • 2 Tbs. flour
  • 2 Tbs. grated onion
  • 1 Tbs. chopped parsley
  • 1 tsp. salt
  • dash nutmeg
  • hot pepper
  • 2 C. finely grated potatoes
  • applesauce

Directions

Clean fillets and chop finely. Combine all ingredients except applesauce. Mix thoroughly. Place a well grease griddle or fry pan about 4 inches from heat and heat until fat is hot but not smoking. Drop 1/3 cup fish mixture on griddle and flatten slightly with spatula. Fry 3-4 minutes. Turn carefully and fry another 3-4 minutes. Drain on absorbent paper. Keep warm in oven until ready to serve. Serve with apples sauce side.
