Perch Potato Pancakes

Ingredients
- 1 lb. perch fillets
- 3 eggs beaten
- 2 Tbs. flour
- 2 Tbs. grated onion
- 1 Tbs. chopped parsley
- 1 tsp. salt
- dash nutmeg
- hot pepper
- 2 C. finely grated potatoes
- applesauce
Directions
Clean fillets and chop finely. Combine all ingredients except applesauce. Mix thoroughly. Place a well grease griddle or fry pan about 4 inches from heat and heat until fat is hot but not smoking. Drop 1/3 cup fish mixture on griddle and flatten slightly with spatula. Fry 3-4 minutes. Turn carefully and fry another 3-4 minutes. Drain on absorbent paper. Keep warm in oven until ready to serve. Serve with apples sauce side.
