Perfect Apple Pie

This pie is great warm, with a scoop of ice cream or ice cold out of the fridge. I make these for bake sales and they have sold out for the last 3 years.

  • 3 Granny Smith apples
  • 3 Golden Delicious apples
  • 3/4 C. sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground ginger
  • 1 Tbs. lemon juice
  • 2 Tbs. flour
  • 2 Tbs. butter or margarine (to dot)
  • more cinnamon and sugar for topping
  • 1 pie crust dough (for double crust!)

Pare and slice apples very thinly. Toss with lemon juice. Mix together sugar, cinnamon, salt, nutmeg, ground ginger, and flour, and sprinkle all over apples. Roll out half of pie dough. Place in a 9-10 inch pie pan. Poke with fork several times. add filing and dot with butter or margarine. Roll out remaining pie dough and top pie, cut several slits to vent. Sprinkle generously with cinnamon sugar mixture. Bake at 450 degrees for 10 minutes. Reduce heat to 350 and bake for 50-60 minutes. Remove to cooling rack.
