In a large standing mixer, stir the yeast and honey into the warm water. Let it sit for 5 to 10 minutes, or until bubbles form and the mixture starts to foam. Add in the salt, oil and 1 1/2 C. flour. Mix until the flour is incorporated, then start adding the rest of the flour, bit by bit, until the dough is slightly tacky but doesn't stick to your hands. Knead the dough for 6 minutes. The sides of the bowl should be clean.

Divide the dough in half at this point if you're making a single batch of bread sticks. If you choose to use all the dough for bread sticks, double the amount of ingredients.

Lightly grease the bowl and the dough so it doesn't dry out, cover with plastic wrap, and let it rise for 1 to 2 hours.

To make the bread sticks, preheat the oven to 500 degrees with a pizza stone inside the oven. Mix the butter and garlic in a small bowl and set aside. On parchment paper, make the dough into a 12-in. circle. Brush the dough with the garlic butter mixture. Top with the cheeses. Season with salt and pepper to taste. Bake for 9 minutes and serve.
