Perfect Fried Plantains

Ingredients
- 2 C. light oil for frying
- 2 plantains
- Salt
Directions
Peel the plantains and cut them in half. Slice the halves lengthwise into thin slices. Preheat oil in a large, deep skillet over medium high heat. Fry the pieces until almost browned. Drain excess oil on paper towels. Let cool. Place on cookie sheet and flatten the plantain and return to fry pan and continue to fry til golden and tender. Remove and place on paper and lightly salt.
