Ingredients
- 35 vanilla wafer cookies, reduced fat
- 4 Tbs. salted butter
- 16 oz. Neufchatel cream cheese
- 1 1/2 C. Splenda
- 1/3 C. lime juice, unsweetened
- 2 C. non-fat whipped topping, non-dairy
Directions
Put the cookies into a plastic sandwich bag and crust them thoroughly. Combine the cookies and the melted butter and press firmly into a 9-inch pie pan. Bake at 400 degrees for 8-10 minutes.
After the crust has cooled, beat the cream cheese and Splenda until fluffy. Gradually add the lime juice. Fold the whipped topping in with a whisk and then chill for 2-3 hours. Serve.
