This is a low carb take on the famous key lime pie that is perfect for that summer party you're planning.

Ingredients

  • 35 vanilla wafer cookies, reduced fat
  • 4 Tbs. salted butter
  • 16 oz. Neufchatel cream cheese
  • 1 1/2 C. Splenda
  • 1/3 C. lime juice, unsweetened
  • 2 C. non-fat whipped topping, non-dairy

Directions

Put the cookies into a plastic sandwich bag and crust them thoroughly. Combine the cookies and the melted butter and press firmly into a 9-inch pie pan. Bake at 400 degrees for 8-10 minutes.


After the crust has cooled, beat the cream cheese and Splenda until fluffy. Gradually add the lime juice. Fold the whipped topping in with a whisk and then chill for 2-3 hours. Serve.
