Perfect Persimmon Cookies
Ingredients
- 1 C. sugar
- 1/2 C. shortening
- 1 egg, beaten
- 1 tsp. baking soda
- 1 C. persimmon pulp
- 2 C. flour
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/8 tsp. cloves
- 1/8 tsp. nutmeg
- 1 C. chopped nuts
Directions
Cream 1/2 C. sugar with shortening. Mix remaining sugar with egg; add to creamed mixture. Dissolve baking soda in persimmon pulp; beat into sugar mixture. Combine dry ingredients; add to persimmon mixture. Mix in nuts. Drop from spoon onto baking sheet. Bake at 375 degrees for 10-15 minutes.
