  • 2 slightly beaten eggs
  • 1 cup whole milk
  • 1/4 cup melted shortening
  • 1 1/2 cup yellow cornmeal
  • 1 cup flour
  • 1/4 cup sugar
  • 2 1/4 tsp. baking powder
  • 3/4 tsp salt

Preheat oven to 450 degrees. Lightly grease an 8 inch square pan. Combine all ingredients in a large bowl, mix thoroughly. Pour batter into pan and bake for 20-25 minutes.

Note: Recipe can modified to make muffins. Fill 12 muffin cups with paper liners or grease. Pour batter into muffin cups until 2/3 full. Bake at 450 degrees for 15-20 minutes or until toothpick inserted comes out clean.
