  • 1/2 C. butter, melted
  • 1/4 C. brown sugar
  • 1 C. sugar
  • 1 tsp. vanilla
  • 6 T. pumpkin puree
  • 1 1/2 C. flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/2 C. white chocolate chips

Whisk together the melted butter, brown sugar, and 1/2 cup of the white sugar in a medium bowl until smooth. Whisk in the vanilla and pumpkin until well combined and set aside. In a separate, large bowl, combine the flour, salt, baking powder, baking soda, 1 1/2 teaspoons cinnamon, and pumpkin pie spice. Pour the wet ingredients into the dry and mix together until it forms a smooth and soft dough. Fold in the chocolate chips, then cover and chill the dough for 30 minutes. In a small bowl, mix the remaining 1/2 cup of sugar and 1/2 teaspoon of cinnamon. Roll the dough into balls, then roll them through the cinnamon sugar mixture. Place the rolled dough onto a baking sheet lined with parchment and flatten them slightly. Bake them at 350 degrees for 8 minutes.
