  • 2/3 C. All-Purpose Flour
  • 2/3 C. Whole Wheat Flour
  • 1 tsp. Baking Powder
  • 1/4 tsp. Sea Salt
  • 8 Tbs. Butter, room temperature
  • 1/2 C. Granulated Sugar
  • 1/4 C. Brown Sugar
  • 2 Medium Eggs
  • 1 Tbs. Lemon Juice
  • 1 tsp. Lemon Zest
  • 5 Large Plums, pitted and wedged

Preheat oven to 350 degrees. Lightly grease an 8x8" baking dish with nonstick cooking spray. In a small bowl, combine all-purpose flour, whole wheat flour, baking powder, and salt. Place the butter, granulated sugar, and brown sugar into a large bowl, and use an electric mixer to beat well. Add eggs 1 at a time, beating well after each addition. Beat in the lemon juice until fully incorporated; repeat with the lemon zest. Gradually beat in the flour mixture. Pour batter into prepared baking dish, using a knife to spread it evenly. Press rows of plum wedges across the batter, spacing each row slightly apart, until batter is completely studded with plums. Bake 50 minutes until cake turns golden brown and a knife inserted into the center comes out clean.
