  • 2 eggs
  • 2 slices rye bread
  • handful of cherry tomatoes
  • 1 red onion, sliced

In a saucepan, heat 3 inches of water to a boil, then reduce down to a simmer.
Break each cold egg into individual small bowls. Hold the cup close to the water and carefully pour the egg into the water. Repeat with the other egg, making sure they don't touch. Cook for 3 to 5 minutes, until the whites are firm. Remove the eggs with a slotted spoon and drain on a paper towel. In a separate saucepan, lightly saute the cherry tomatoes and onions. Serve the eggs over bread with the veggies.
