Ingredients

  • 1 ½ lb. boneless chicken breasts
  • 4 carrots, peeled and chopped
  • 1 onion, diced
  • 4 stalks celery, chopped
  • 4 cloves garlic, minced
  • 3 T. olive oil
  • 6 C. chicken broth
  • 1 C. water
  • 1 tsp. dried thyme
  • ½ tsp. dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 C. egg noodles
  • ¼ C. fresh parsley, chopped
  • 1 T. lemon juice

Directions

In your crockpot, add chicken, carrots, onion, celery, and garlic. Stir in olive oil, chicken broth, water, thyme, rosemary, bay leaf, salt, and pepper. Cook on low for 6 hours, shred chicken into bite-sized pieces, add noodles, and cook for another 10 to 20 minutes as noodles become tender. Stir in parsley and lemon juice and serve.
