  • 4 boneless chicken breasts, cut into strips
  • 8 potatoes, sliced
  • 1/3 C. olive oil
  • Salt and pepper to taste
  • 1 T. paprika
  • 4 cloves garlic, minced
  • ½ C. Parmesan cheese, grated

Preheat oven to 400 degrees. In a large bowl, combine oil, salt, pepper, paprika, and garlic. Add in potato slices, toss in seasoned oil until evenly coated, cover and set aside for 10 to 15 minutes to soak in the flavor. In a greased baking dish, spread out potatoes and bake for 45 minutes until tender. In a large skillet, heat up a tablespoon of leftover oil marinade from the potatoes and brown chicken strips until cooked through. Add to potatoes, toss with Parmesan, and finish baking for another 10 to 15 minutes.
