Perpetti (Cheese Balls)
Ingredients
- 2 C. breadcrumbs
- 1 C. Parmesan cheese, grated
- 1 C. mashed potatoes (no salt added)
- 1 Tbs. parsley
- 2 tsp garlic powder
- 4 eggs
- black pepper to taste
Directions
Mix potatoes and all dry ingredients in bowl. Add eggs and mix well. Roll into small balls 1 to 1 1/2 inches in diameter. Fry in deep fat or oil on medium heat until lightly browned, turning once. Simmer in favorite spaghetti sauce for 1 hour.These are great also baked in 375-degree oven for 15 minutes on both sides. If preparing them this way do not put in spaghetti sauce as they will not hold their shape.
