Ingredients

  • 1 C. persimmon pulp
  • 2 tsp. baking soda
  • 3 C. white sugar
  • 1 C. vegetable oil
  • 4 eggs
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1 1/2 tsp. salt
  • 2/3 C. water
  • 3 C. all purpose flour
  • 1 C. chopped pecans
  • 1/2 C. raisins [optional]

Directions

1. Pre heat oven to 350 degrees, grease 3 loaf pans.
2. In a small bowl mix persimmon pulp and baking soda, let stand 5 minutes to thicken.
3. In a medium bowl, combine sugar,oil, eggs,cinnamon, nutmeg, and salt. Blend until smooth. Mix in persimmon pulp and water alternating with flour. Fold in nuts and raisins. Divide batter in 3 loaf pans. 4. Bake 1 hour in preheated oven, or until tooth pick comes out clean. Cool 10 min in pans then remove to wire rack.
