Persimmon Cake
Ingredients
- 2 C. chopped walnuts
- 2 C. persimmon pulp, chopped fine
- 2 C. raisins
- 2 Tbs. vegetable oil
- 2 C. white sugar
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 2 tsp ground cinnamon
- 2 tsp baking soda
- 1 C. milk
Directions
Mix nuts, raisins, persimmon pulp, sugar and oil. Sift together flour, spices and baking soda. Add alternately into the persimmon mixture with the milk. Bake in 325 degree oven for 1 1/2 hours.
Yield: 2 loaves
