Persimmon Cake
Ingredients
- 3/4 C. sugar
- 3 tsp. baking powder
- 3 Tbs. butter
- 3/4 C. persimmon pulp, dried (see note)
- 1 3/4 C. flour
- 1/2 C. milk
- 1/2 tsp. salt
- 1 egg
Directions
Mix as you prefer, add persimmon pulp last. Bake in greased loaf or tube pan. Sift powdered sugar over top of batter. Bake at 350 degrees. Hold to ear if you hear crackling sounds it isn’t done. Remove from pan immediately when done.
Note: Gather persimmons and dry them. And store in covered jar. Or remove
seeds, place in jars and seal and process for 45 minutes in hot water bath.
