Persimmon Cake

I inherited this recipe from my mother. It's very delicious and can be made ahead of time (and frozen)!

Ingredients

  • 1 1/4 C. sugar (or Splenda)
  • 1/3 C. shortening (can substitute with applesauce)
  • 1 1/4 C. flour
  • 1 egg
  • 1 C. raisins
  • 1 pinch salt
  • 1/3 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. allspice
  • 1 C. nuts (i.e. pecans or walnuts)
  • 1 C. persimmon pulp, mashed

Directions

Cream shortening & sugar, add egg, then sifted ingredients. Stir in persimmon pulp, raisins, & nuts. until well blended. Bake 1 hour in bread loaf pan at 350*.
