Persimmon Cake

Ingredients
- 1 1/4 C. sugar (or Splenda)
- 1/3 C. shortening (can substitute with applesauce)
- 1 1/4 C. flour
- 1 egg
- 1 C. raisins
- 1 pinch salt
- 1/3 tsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. allspice
- 1 C. nuts (i.e. pecans or walnuts)
- 1 C. persimmon pulp, mashed
Directions
Cream shortening & sugar, add egg, then sifted ingredients. Stir in persimmon pulp, raisins, & nuts. until well blended. Bake 1 hour in bread loaf pan at 350*.
