Persimmon Cookies

Persimmons are in interesting fruit not commonly found in the United States, although you can certainly find them at specialty grocery stores. They are sweet in flavor, much like a date or a plum, so they're great for baking.

Ingredients

  • 2 ripe persimmons, pureed
  • 1 tsp. baking soda
  • 2 C. all-purpose flour
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1 egg
  • 1 C. white sugar
  • 1/2 C. butter
  • 1 C. raisins
  • 1 C. chopped walnuts

Directions

Preheat oven to 350 degrees. Dissolve baking soda in persimmon pulp and set aside.

Sift flour, spices and salt together, set aside. Cream together butter or margarine and sugar until fluffy, beat in egg and persimmon. Stir in dry ingredients. Stir in nuts and raisins. Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes.

Yield: 3 dozen
