Persimmon Date Nut Bread
Ingredients
- 1/4 C. plus 2 Tbs. oleo, softened
- 1 C. sugar
- 2 eggs
- 1 tsp. baking soda
- 1 C. persimmon pulp
- 1/2 tsp. salt
- 2 C. flour
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. cloves
- 1 C. chopped pecans
- 1 C. chopped dates
Directions
Cream butter and sugar, add eggs one at a time (beating well). Combine baking soda and persimmon pulp. Let stand until soda is dissolved. Add to creamed mixture, blending well. Combine next 5 (dry ingredients) and gradually add to batter, beat well. Stir in nuts and dates. Pour into greased 9x5x3 loaf pan. Bake for 1 hour and 20 minutes at 350 degrees. Cool in pan 10 minutes. Remove and cool on wire rack.
