Persimmon Date Nut Bread

This spicy bread has cinnamon, nutmeg, cloves and pecans for a flavor-packed bread with a fruity twist.

  • 1/4 C. plus 2 Tbs. oleo, softened
  • 1 C. sugar
  • 2 eggs
  • 1 tsp. baking soda
  • 1 C. persimmon pulp
  • 1/2 tsp. salt
  • 2 C. flour
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1 C. chopped pecans
  • 1 C. chopped dates

Cream butter and sugar, add eggs one at a time (beating well). Combine baking soda and persimmon pulp. Let stand until soda is dissolved. Add to creamed mixture, blending well. Combine next 5 (dry ingredients) and gradually add to batter, beat well. Stir in nuts and dates. Pour into greased 9x5x3 loaf pan. Bake for 1 hour and 20 minutes at 350 degrees. Cool in pan 10 minutes. Remove and cool on wire rack.
